If you can pay someone 9 euros at age 20, but have to pay them 10 euros when they turn 21, what happens when they turn 21?

How do employers know they can legally pay one person less than the other? Does the employer find out they are 16 and then lower their pay to 6 euros?

You just start paying them more when they turn 21. Not sure if it kicks in at the start of the month/day/hour of their birthday though.

You wouldn't lower the pay, you'd likely just start them out at the lower rate.
